As you can see, they're very fleshy and "tanned," indicating they're fully ripe. We cut all the mushrooms before New Year's and used them for the holiday table—they were delicious, and our guests, who didn't know we grow winter honey mushrooms, were surprised to learn where we got this type of mushroom fresh.
