We marinate tomatoes using our mother's old recipes, make assorted accompaniments, adding cucumbers and other vegetables, and tomatoes in their own juice. We make lecho (a type of lecho) and eggplant with tomato sauce. We boil tomato juice and make a tomato gargle—we call it "Eye-Cutting."

Place 5-10 black peppercorns, 2 bay leaves, 3 cloves, and 1 teaspoon of mustard seeds in the bottom of a clean jar. The spice recipe is for a 3-liter jar.

Then add a layer of tomatoes, a layer of grapes, more tomatoes and grapes until the jar is full.

Pour boiling water over the jars of tomatoes, cover with lids, and leave for 10-15 minutes.

Drain the water into a saucepan, bring to a boil and pour it back into the jars, cool and drain again, but this time you need to measure the milliliters, since the marinade is prepared at the rate of 1 tablespoon of salt and 1.5 tablespoons of sugar per 1 liter of water.

Pour the boiling marinade into the jars, adding 1.5 tablespoons of 9% vinegar per 3-liter jar. Seal with lids and wrap in a warm blanket.

Recipe: Marinated Tomatoes with Plums

Ingredients: tomatoes, plums, garlic, bay leaf, black peppercorns, allspice.

Marinade: For 1 liter of water, add 1 heaping tablespoon of salt and 3 full tablespoons of sugar. Add 1 tablespoon of 9% vinegar to the boiling marinade before pouring into the jars.

Place 1 bay leaf, 6 black peppercorns, 3 allspice, 2-3 cloves of garlic on the bottom of clean, sterile jars, fill the jar with tomatoes and plums, laying them in layers.

Pour boiling water over the jars and cover with lids. Let sit for 10-15 minutes. Then drain the water into a saucepan, bring to a boil, and pour it back into the jars.

Cool, measure the amount of water to prepare the marinade based on 1 liter. Add sugar, salt, and vinegar to the water.

Pour the boiling marinade into the jars, close the lids, turn the jars upside down, and wrap them in a warm blanket.

The finished products look beautiful and appetizing.

Wow! I've never tried it with grapes! What can I say, that combination never even occurred to me. Thanks for the recipe—I'll make a couple of jars myself.
