Ketchup is easy to make at home, especially when you have a large harvest of ripe and fleshy tomatoes.
We've already made all sorts of tomato preserves for the winter and decided to make some ketchup too. I've been making ketchup for several years now. It tastes like that authentic Bulgarian ketchup in those little glass bottles that was sold in stores during Soviet times.
I made tomato ketchup for the first time, using different recipes and making several jars. I found the recipes online. This recipe turned out the most delicious. Now I make this ketchup every year.
Recipe
To prepare Bulgarian ketchup you need the following ingredients:
- tomatoes - 1.5 kg;
- sugar - 50-70 grams;
- salt - half a tablespoon;
- vinegar 9% - 2 tablespoons.
You will also need spices:
- black peppercorns - 15-20 pcs.;
- allspice peas - 4-5 pcs.;
- cloves - 2 pcs.;
- coriander - 10 pcs.
Another small bunch of greens - basil, parsley.
Making ketchup
Cut ripe tomatoes into slices.
Place in a large saucepan. Cook for 10 minutes after boiling, then reduce heat.
Grind with an immersion blender.
Add salt and sugar. Cook the ketchup over low heat for 1.5-2 hours, stirring constantly. Then add the spices. You can wrap them in a clean cloth, tie them with string, and place them in the pan. Once the spices release their aroma, remove the cloth and discard.
I just grind all the spices and add them to the pan.
The greens need to be finely chopped and added to the ketchup, mix the mixture well.
Pour in 2 tablespoons of vinegar.
Boil for another 10 minutes and pour into clean, sterile jars.
Cover with lids and wrap in a terry towel.
The ketchup is thick, aromatic, and delicious. It's eaten primarily as a condiment for meat and side dishes. Ketchup should be stored in a cool place. We keep it in the refrigerator.

Hello, Victoria! I don't think the color of the tomatoes will affect the taste of the ketchup, but it might taste different. After all, yellow tomatoes taste slightly different from red ones. Try making some. It will make a unique yellow ketchup.
I tried this recipe only with yellow tomatoes. I'll say this: the color is unusual and fun, but the taste was a bit sour. Maybe because my yellow tomatoes are a bit sour...
