Carrots and beets freeze quite often, as we harvest them last. This year, we managed to harvest the crop on time, but one day we left a bag of deformed root vegetables outside, and the next evening, frost hit…
In the end, my carrot froze like this:
How to treat carrots with cracks, I already wrote, and now I want to tell you what you can do with frozen root vegetables:
- First, I wash and peel the carrots.
- Next, I trim off all the uneven areas, cut out spots, etc.
- I wash it again in clean water and put it in a bowl.
- Then I grate it.
- You see, the core is slightly frozen – this is not critical.
- Now I pack carrots into bags (I like the vacuum-sealed ones, but they're all gone now, along with the harvest season). So I use regular ones. And they have to be small, so they're portioned out.
- I try to release the air from each bag to achieve at least a semi-vacuum.
- I put it in the freezer.
By the way, if there are any pieces left that aren't cut all the way through with a grater, I don't throw them away – I freeze them too and add them to my dogs' porridge))))
You can cut carrots into fancy shapes or even freeze them whole. Just remember not to refreeze them after defrosting.
